A never ending war between Emilia Romagna, Campania, where in dialect is called "Parmigiana 'e mulignane" and the Sicilian version, "Parmiciana" or "Patrociane". Different recipes, but all authentic and delicious! The name "Parmigiana" might derive from the Sicilian "Parmiciana", which, in dialect, refers to the pile of wooden slats in windows, like slices of eggplant in the pan. With simple ingredients like tomato, eggplant, basil, mozzarella, and extra virgin olive oil, you get an explosion of flavor for a dish symbol of the mediterranean cuisine! My recipe? "Arrosto di manzo" is a flavorful Italian beef prepared with onions, carrots, red wine, and rosemary. Come to Puglia, the most beautiful region in the world according to National Geographic (2021). Here, among the dozens of typical dishes, you can taste the famous "orecchiette," literally small ears. It's a homemade fresh pasta that is slowly and carefully produced with semolina flour. Precise hand movements that clips and rolls the ear. I learned it from my mother-in-law, who is obviously from Puglia. You can cook them in many ways, and the preparation is simple and quick. If you want to follow our tradition, "orecchiette" should be served with "cime di rape", anchovies, and a drizzle of extra virgin olive oil, preferably from Puglia. My husband, from Taranto, likes them with "ricotta ascquante" in dialect, a ricotta that naturally becomes sour. All ingredients not easy to be found in Norway, but I still managed to impress my guests and they gave me a thumbs up! I will suggest a receip you can try.

Tagliatelle are a typical egg pasta from Emilia-Romagna and widely used in traditional Italian cuisine. Their name come from the verb "tagliare" because, traditionally, they are made by rolling out the dough into a thin sheet and cutting it into strips after rolling it up. Tagliatelle are prepared with dozens of different recipes. The most famous is the one with ragù, but I also like to surprise my guests with mushrooms or duck. However, don't worry, I can give you the best tips to enjoy the true Italian taste at your own place.

This traditional pasta, which probably originates from Tuscany, is similar to the most famous "tagliatelle" but wider. The name comes from the verb "pappare", which means to devour food. In the past, it was primarily served with fatty game ragùs, for example wild boar "Ragù Cinghiale" or with the hare. This pasta variety is so popular and in some places parties are held in its honor. For example, the "Sagra delle Pappardelle al cinghiale" festival (Pappardelle with wild boar festival) is held in the small town of Gemmano in the Emilia-Romagna region every August. Assunta's version with mushrooms and Speck from Trentino is delicious.

It seems that this famous type of fresh pasta comes from Gavi Ligure, in Liguria. I am not sure about, however I can tell you that in every single corner of Italy, the fillings that stuff the ravioli are heavily influenced by local culinary traditions. Same for their shapes. Personally, I adore the version with pumpkin and Parmesan, or the more classic one with ricotta cheese and spinach. Their cooking requires only a few minutes, and, with some additional ingredients, which will no longer be a secret for you, you could serve a gourmet dish at your home!
